On Windows I use
Mozilla Thunderbird
for email. Thunderbird, like every other email application,
allows the creation of rules. These rules then get applied to
email as it arrives.
Apple's Mail application also includes this fundamental
email feature. However, there is one rule feature in
Mail.app which I have not seen before: you can colour email
messages as they arrive.

For example: you can make all emails
from people in your address book appear with a red background in the list,
or you can make the dock icon for
Mail bounce when an email arrives from a particular person.

Another fun
function is "Bounce", use this on unwanted emails
and it should give an error to the sender. You can use this to
"trick" spammers into marking your address ss invalid (I
hope).
